Projects
I create tight, focused food concepts in Copenhagen, Denmark.
- **Diamond Slice:** The 6th best pizza in the world according to Time Out Magazine.
Opened in 2022 in the heart of Blågårds Plads, Copenhagen with a second location following not long after in 2023. We have quickly become a beloved neighborhood institution and a strong festival presence at Roskilde. Last year we sold 23,000 slices at the festival, meaning that about 25% of the festival goers ate our pizza. We are interested in expanding to new cities if we find the right partner. Maybe you?

- **Rays Chicken:** Super crispy buttermilk brined fried chicken with world class sauces.
Opened in Gamma bar in 2024 and focused on building the brand. Soon to be available for delivery with a focus on catering, we are actively searching for a prime brick-and-mortar location in the city.

- **APIZZA:** Opened August 2025, APIZZA brings New Haven style pizza to Haven bar in Nørrebro.
Located across from the famous Nørrebro Parken, we serve crisp classics perfect for picnics, delivery, and take away. Loved by Politiken's David Dyrholm, we are focused on growing capital to secure our next brick-and-mortar location in the city.

:: Entrepreneurship & Leadership ::
- **Friheden, Copenhagen, Denmark**
*Head Chef (2019 - 2022)*
Took over the kitchen and developed a hyped, popular food program that put the spot on the map. Successfully navigated the complications of Covid and made Friheden the place-to-be when lockdown ended. Gained important lessons on the necessity of developing a strong concept and staying true to it.
- **Mission cph, Copenhagen, Denmark**
*Opening Head Chef (February 2018 - September 2019)*
Opened and executed a new menu concept in downtown Copenhagen. Designed and purchased the kitchen under budget and oversaw installation. Maintained stable, on-budget food and staff costs. Successfully developed pizza and pasta programs using Danish flour. Achieved recognition in Politiken's "7 Things You Should Eat Right Now".
- **Ludzu & Xie Xie / Ludzu Shine, Vancouver, Canada**
*Owner and Operator (July 2009 - April 2012)*
Co-developed a successful pop-up restaurant series around Metro Vancouver. Designed and built custom distillation equipment, responsible for high-quality spirit production. Built community and culture while dodging the law.

- **Bæst, Copenhagen, Denmark**
*Sous Chef (September 2015 - July 2017)*
Responsible for daily operation, serving over 300 guests per evening. Created the gelato and yogurt program; managed the daily production of fresh mozzarella. Part of the team that earned Bistro of the Year 2015.
- **Mava Foods Ltd., Vancouver, Canada**
*Sales and Administration Manager (January 2011 - April 2012)*
Handled food costing, ordering, and administration in an industrial kitchen. Calculated ingredient velocities and negotiated lower prices. Created the food safety manual and earned HACCP certification.
- **Brinkman & Associates Ltd., Vancouver, Canada**
*Head Cook (April 2012 - August 2012)*
Managed ordering, costing, and menu planning for 90 people eating 5,000 calories a day. Set up portable kitchens in three different camps in Northern Canada. Operated a grizzly and wolf safe environment and shopped by helicopter.

- **Pitt Cue Co., London, England**
*Grill Chef (January 2014 - May 2015)*
Cooked and prepared meat for 170 people per day in a tiny kitchen. Created and oversaw the bread program.
- **Spannocchia Foundation, Tuscany, Italy**
Harvesting olives and grapes. Making oil and wine. Slaughtering and butchering pigs.
- **Rose Harbour, Haida Gwaii, British Columbia**
*Internship (August 2011)*
A unique experience in pure logistics: cooked meals using only food caught, grown, or foraged on the island, budgeting ingredients based solely on the float plane schedule.

Personal
I live in Copenhagen with my fiancée, Else, who is a researcher at Copenhagen University, and my two boys, Casper and Oscar. We have a crested gecko named Tuesday. I spend as much time as I can researching and dreaming about new opportunities within food and hospitality. The rest of my time is taken up with my boys and skateboarding. I'm currently terrible at skating but am getting injured less often and learning new tricks. Having a humbling practice keeps me young and promotes neuroplasticity.
